Koval Bourbon

Koval Bourbon is a distinct, small-batch spirit crafted with a unique mash bill, featuring millet as the primary grain alongside corn, rather than the traditional rye or wheat. This unusual choice gives it a singularly light and fruity profile, making it a truly unconventional American whiskey. Distilled by the Chicago-based distillery, Koval is celebrated for its commitment to the \”grain-to-bottle\” approach, meaning every part of the process, from milling to bottling, happens on site. Aged in new, charred American oak barrels, this bourbon is characterized by bright, clean notes of apricot, vanilla, and sweet caramel. Its single-barrel release ensures variation and complexity. Bottled at a smooth 47% ABV, it offers a pure, crisp finish that is exceptional when enjoyed neat or used as an elegant base for classic cocktails.
